Foodie Fun.

Southwestern Steak Linguine
(Please do not judge my photography skills from the above picture. Indoor lighting is yucky!)

Threw this meal together tonight and it was amazing. A must share.


3 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Ancho Chili Powder
1 Clove Garlic, chopped
1 Can Diced Tomatoes, drained
2 Teaspoons Sea Salt
1 Can Black Beans, drained
1 Cup Salsa
3 6oz Sirloin Steaks, grilled, sliced very thin
1 cup fresh corn (freezer corn will work as well)
3/4 lb of linguine, cooked and drained

In large skillet, heat oil and add chili powder and garlic, saute for 1 minute.
Add canned tomatoes and sea salt and saute on high for 3 minutes until tomatoes start to liquefy and bubble. Turn heat to medium-high and add beans, salsa and steak. Saute together for 2 minutes. Add corn and saute additional 1 minute. Remove from heat and toss in linguine.
This recipe served 6 adults.
