Trippin on Tuesday....

1. Roman had his fourteenth haircut. That’s 1-4! His hair grows so fast. Its cut short now so we are back with the faux hawk! Its very cute.

2.A pet gerbil causes a 3 car accident in Springville- Weird. Apparently the rodent got out of the cage and the girl driving started to look for him- while she was driving. The drivers of the other 2 cars broke their legs. People- it’s a rodent. Why do you even have it as a pet. Damn Gerbil!

3. My allergies.

4.SPAM reports a 10% increase of profit for the last 3 months. So basically when the economy is bad people tend to eat fake meat? How disgusting is that.

5.Gas prices- I feel like a broken record.

6.Grocery prices- Has anyone else noticed the price of staples going up?

7.Recycling- who knew how much my family could actually recycle. It’s so amazing. I love it! I love our environment and it makes me feel good to be doing something good for it. Now if I could just ride a scooter to work. Anyone have one I can borrower- specifically one that is pink and has a matching pink helmet. :)

8.THIS STORY.. whoa..

9.Tim Russert’s death. He collapsed at the age of 58. What a shocker- I think he was a classy journalist who was able to keep his views and opinions open and tried to always be a family man. I grew up watching him on Meet the Press. (coming from a political family we it was always on Sunday mornings- yes instead of Music and the Spoken Word) He was very pointed in asking questions but always handled it in a classy way. I will miss his voice and outlook!

10.The flood in the mid-west. I have had this song in my head all weekend. “The lord said to Noah…there’s going to be a floody floody..”

11.For Father’s Day I bought Chuck and my dad front row- ring side tickets to the WWE Monday Night Wrestling Raw. My dad- decided he wanted to send my little brother Tim- who is leaving for a mission in a week- since Tim loved WWE as a little boy. So they went and we seen them on TV all night long. It was hilarious. We even seen Tim get a little embarrassed by the Bikini Contest. (who knew, I guess wrestling isn’t so kid friendly any more)

12.Roman has a new obsession- sticking his finger up his nose. Its so gross. I battle it all day long. Get your finger out of your nose. Any suggestions??

Some days I am totally embarrased to be from Utah!

Not so bad seeing I was a piglet all weekend. BACK TO WORK!

Weight Watchers Wednesday..

Okay since I can not seem to get myself organized enough to post on Mouthwatering Monday.. I had an epiphany.. since I am making up/trying new recipes that are Weight Watchers friendly that I should do a WW Wednesday and post my latest recipe. Good idea? Ya- I thought so. So here is this weeks..




This is what mine actually looked like!


Chicken Parmesan WW Style.



POINTS® Value: 5
1 sprays olive oil cooking spray
1 pound uncooked boneless, skinless chicken breast, thinly pounded (four 4-oz
pieces)
2 large egg white(s), lightly beaten
1/2 cup dried bread crumbs
1 Tbsp Italian seasoning
1/2 tsp table salt, or to taste
1 tsp olive oil
1 1/2 cup Hunts 4-cheese Spaghetti sauce
1/2 cup part-skim mozzarella cheese, shredded
1 Tbsp grated Parmesan cheese



Preheat oven to 350ºF. Coat an 8-inch square pan with cooking spray.
Place egg whites in a shallow bowl. Combine bread crumbs with Italian seasoning
and salt; pour into another shallow bowl. Dip chicken in egg whites; turn to coat. Dip
chicken in bread crumb mixture; turn to thoroughly coat.
Coat a large skillet with cooking spray and add oil; heat over medium-high heat.
When hot, add chicken and cook until lightly browned and no longer pink in center,
about 4 minutes per side.
Pour sauce into prepared baking dish; place chicken in dish on top of sauce. Sprinkle with cheeses and bake until chicken
is cooked through and cheese is bubbly, about 25 minutes. Enjoy.

See- even baby loved it.

Trippin on Tuesday..

Things that have me trippin this Tuesday..

1. That it's been 4 weeks since I've done my trippin post.. ekk.
2. Hulk Hogan appearing on Larry King Live tonight, BORING. How about an expert on helping us save money on gas. Or someone speaking out on how we can do something about gas prices. Speaking of gas prices... that brings us to #
3. According to my calculations.. 1 year ago the average gas price was roughly $2.80 a gallon. Today the national average is $4.04. That is a difference of an outlandish $1.24 a gallon. So. If my average's are correct. My family. Including Me, DH and my Dad(who lives with us) consume around 7 gallons of gas a day. Mostly from Dad and I commuting. That's a $43.40 more a week this year in gas than last year, that's a whopping $173.60 more a month for gas than one year ago today. Also just a fun little tidbit of info. 10 years ago when I graduated High School.. gas was an average of .97. That meant it cost me around $10 to fill my car and drive it for 2 weeks. Bummer.
4. The WW friendly Chicken Parmesan I made for dinner last night.. and brought for left overs today. It was so delish, and so healthy. Look for the recipe on here in the next few days.
5. My DAD bought Roman a skateboard. A tiny fat toddler skateboard. Anyone know where to get a teeny tiny helmet.
6. Speaking of Roman- all of a sudden he has separation issues when its convenient to him. IE- Nursery, the day care at the gym. Otherwise he can not be bothered by the nuisance he calls his mother. (besides a few times a day when he wants a hug and snuggle a kiss.)
7. This story .. even further proof that not only illegal aliens have insurance problems.. but regular ol everyday people who have regular jobs. Sucks.
8. I am planning my 10 yr class reunion and I found out that 2 of our classmates(out of 98.. we are a small school) are in Iraq right now. This is scary. It hits home when you know someone personally who could be killed in this war anyday. I pray they are safe.
9. My recycling bins are being delivered today. I am so giddy to get the ball rolling in my neighborhood. They take everything but glass, Styrofoam and rubber. So I am excited to see how much our garbage dwindles down when we are recycling. I am trying really hard to make my families carbon footprint lower. But the driving to work thing is killing me!
10. THIS new blog. Its a friend's new donate-a-recipe blog. I am so excited! I have been working on a cookbook for a long time so this will be great to add some new.. fresh recipe's and idea's. The girls in my neighborhood have it going on I tell you!
11. How great I am feeling. I have been on WW for 2 full weeks now and i feel like a new woman. I am loving it and hoping I have the guts to keep going. I also regress to eating what I want whenever the times get tough.
12. Down 12 LBS!
13. Just found out that a SMURFS movie is being made. YES- finally all of my dreams have come true!

Obama

Well- The Democrat Nomination Campaign is officially over.
My first choice- was Senator Edwards. He gave me the yummy fuzzies.
My second choice- Was Hillary- whom I voted for.
And now my last choice- by rule of elimination is Barack Obama.
I haven't necessarily hated Barack or ever been against him by any means.
Just preferred another candidate to him.
The only major issue that I have a different view than he does is United Health Care.
His view is for a voluntary health care system. Where I think that a mandated one would probably be best. But that is something I can get over. He might know better.
I mean the number one reason he should be President is because he just looks like a President. He is Handsome, and amazing speaker and he came from a single mother and was raised by his lovely Grandmother. I do think he is a good man. I think he just has a lack of experience in governing. He has only ever been a Senator, never a governor.
Anyways- I am rambling. I love the Historical Significance that him winning the Nomination brings. To think that only a generation ago Blacks were not allowed to do something as simple as have a seat on a bus. Now we have a serious Presidential bid won by a Black man. This makes me so happy that our country is making ground. A lot of people (myself included) have commented negatively on his lack of experience but after watching the news last night and seeing that historically the majority of President's were Governor's first.. I got to thinking.. Our country is not really in that great of shape after being ran by a bunch of experienced Governor's anyways. So maybe it is time for a breath of fresh air and some MAJOR change in DC. What are your thoughts?

I realize I have been majorly slackin on my Mouthwatering Monday and Trippin on Tuesday posts. Of course- I am sick again. I can't figure out what is going on with my body but I have the cold from hell and have been miserable. So lets hope for next week to have some good posts!

Roman got Tagged!

A few things you might not know about Roman:

1. He is adopted. But I forget. I even have an imaginary birth story my memory has concocted. It's embarrassing when I lie about having an epidural. Opps.

2. He says "Sh*t" alot. Wonder where he got that?

3. He just had his 12th haircut.

4. He eats a jar of mandarin oranges every 2 days.

5. He figured out how to pick his nose.

6. He loves, loves, loves The Backyardians. He literally has a seizure every time he hears the "Da duh, Hi, I'm Paublo".

7. He has my parents wrapped around his fingers.

8. He recently got a trampoline. And now does somersaults on it.

9. I once got asked if he was a midget.

10. He went to nursery for the first time on Sunday. And lasted 45 mins. He needed a nap.

11. He started to say "thanks" anytime you give him something at 13 months.

12. He crawled at 7 months.

13. He walked at 10 months. I am tired.

14. Be careful when sitting you cross your legs. That hanging foot equals "riding a horsey" and he might just mount on ya and start jumping!

15. He still has a little peach fuzz on his bum from when he was born, it is so cute!
