Mouthwatering Monday...

Mouthwatering Monday!
Today is a double dish day. My two favorite meals from the week.



Taco Salad
1.5 lbs hamburger browned, drained, salt and peppered
1 Pkg. Taco Seasoning
(use seasoning for hamburger when cooking it)
2 Cups Shredded Cheddar Cheese
1 Head Iceberg Lettuce, chopped
3 Roma Tomatoes, diced
1 Can Kidney Beans, drained and rinsed
1 Can Black Olives
1 Bottle of Thousand Island Dressing
1 Bag of Nacho Cheese Doritos
In bowl toss cooled hamburger, cheese, lettuce, tomatoes, beans and olives. Add 3/4 bottle of dressing and toss well. Next, crush chips inside package then open and poor 3/4 of chips in bowl and mix well. Enjoy! I garnish mine with a little sour cream.

Pork Roast
(I have been buying these lean, delicious pork loin roasts at Costco for $1.99 a lb.)
Rinse roast and pat dry. Massage in 3tbs of olive oil and roll in the following dry rub.
2 Tablespoons Johnny's Garlic Spread & Seasoning (found at Costco in spice aisle)
2 Tablespoons Dried Chopped Onion (also in spice aisle at Costco)
1 Tablespoon Granulated Garlic
2 Tablespoons "Perfect Blend" Chicken Rub
Once the roast is complete covered in the rub, Sear in Olive Oil on very high heat on all sides of the roast. You want to make sure every part of the roast has been seared. This is very important in keeping the roast moist. Put in crock pot on "4 hours" for 4 hours or until done. This is a Sunday favorite at my house, you just pop it in right before church and its done and smelling great when you get home!

Trying to be fancy!


I have been playing around with my new camera and have taken pictures of friends kids in the last few weeks. Below are some I played with in Photoshop over the weekend. I have about a gabillion more to go through and get organized but I am really loving it. Its so fun. Roman's picture is pretty boring but it is only one that he is remotely looking up for. UGH! I hope this stage passes! Taylor the older little girl was a charm and total natural to work with. Katie the baby was so fun too.I will post more as I get deeper into to them but hope you enjoy!

Making me Marvelous!


My mom is going to school to be an Esthetician.
What does this mean to me? Loads and loads of super cheap beauty procedures.
Last night I was her model for the eyelash perm and tint as well as the eyebrow tint. Here is a run down of what happened.
6:20 PM: I arrive at her school and wait for her to come up and get me.
6:23 PM: Mom comes and gets me and I go to the procedure room.
6:24 PM: Another model shows up. He is getting his eyelashes permed and tinted as well. I tell him they will look "pretty". He is not bothered by this as he says: "I am the epitome of pretty boy"
6:26 PM I take a swig of my Dt. Mt. Dew in hopes that it will jump start my gaydar. I just can't figure out which team he bats for and I think he is cute so I am wanting to fix him up with a friend. Girl or boy.
6:27PM: Pretty boy says he wants his brows tinted "black, black"
6:30 PM: Mom starts my eyelash perm.
6:31 PM: I am praying for this to be over.
6:32 PM: Mom really starts it. I was hallucinating before.
6:33 PM: The sticky icky eyelash perm rod goes on. Awkward.
6:45 PM: Mom still trying to get my eyelashes situated as my eyes are watering so bad from being bothered that the sticky part of the perm rod is gone.
6:47 PM: First Solution Starts: Wait 14 minutes. (during this time I think of how the CIA could use this as a torture procedure. And the Geneva Convention would still be valid. As the CIA could call it a "beauty treatment."
7:01PM: Second solution goes on. Wait 14 minutes. (this time I am thinking about how instead of getting tortured right now I could be finding a cure for AIDS or Cancer. Solving the conflict in Iraq. Trying to focus on other things so I do not have a meltdown from having the phobes and ruin my almost over procedure. *trying to be very good model and not complain*
7:20 PM: The nourishing lotion applied. I am now the owner of fabulous curled eyelashes. WHOA. Dramatic. WHOA. Not doing that again. WHOA.. Pretty.. might have to do this again.
7:25PM: Eyebrow tint time. Very painless. Very fast. Very pretty. Will do that again!
7:28 PM: Mom starts to cover my whole body in Vaseline as this protects your skin from the eyelash tint. Okay not my whole body but the majority of my face. I am still working on removing it.
7:38 PM: Mom still covering me with Vaseline.
7:42 PM: Tint finally goes on.
7:52 PM: Oh my goodness. My lashes are marvelous. Tinting is the best thing ever. Very easy. Not painful. Not uncomfortable. I look 37 lbs lighter even. I could keep up with this every six weeks. (not an ounce of tint anywhere on my face. Thanks mom!)
8:oo PM: Still looking at myself in the mirror.
8:12 PM: I am so pretty.
8:15 PM: Time to start the seaweed back treatment. Life is good.
9:47 PM: All done with the back treatment. The last 1 hour and 32 minutes went by so fast and so lovely. I think I snored. I think I drooled. Life is good!
Moral of the story: Mom going to school to be a Esthetician is an AMAZING idea!

Easter Weekend

Happy Easter!
I hope everyone had a marvelous Easter. Above is a picture of Roman with his
Easter basket. He really was not sure what to think about it all. But he sure did love the balls
he got and the Backyardigans bubble blower.

Above is a picture of Roman in his Easter outfit that I took at the park by my house.

My best friend Candice was in town from California and we like to take our

kids Easter pictures together. Roman would not look at the camera the entire time. UGH!

I hope this is a stage.


Here is a pic of the three of them together. Notice how her little girls are nice and good and

look at the camera. Notice how my kid dodges the camera like a bullet.

He is looking at the camera in this one because I am hitting myself

in the head with the green ball and he thoguht it was hilarous.

Here is him on the Easter egg hunt up in Idaho yesterday at my Aunt's house.

We had such a blast and I was able to see a bunch of my cousin and their kids.

My one cousins ITTY BITTY 2 week old baby was there and he was so

yummy I almost stole him. I had a ton of fun taking all of their pics

with my new camera. I start my photography class soon so I am very excited!


And just for fun here is Roman last year on Easter. He was roughly 4 months old.

He loved the camera then. So handsome and CUTE!

Mouthwatering Monday..

Bunny Cakes


My family has a tradition of making a Bunny Cake each year for
Easter Dinner. The 3 or so years I have taken it upon myself to do them.
So for Today's recipe its the homemade cream cheese frosting that
I topped yesterday's spice bunny cake with.
I used a Duncan Hines Spice Cake mix because it tastes better
than homemade. And trust me.. I am a Spice cake conniseur! LOL
Cream Cheese Frosting
1 pkg. Soft Cream Cheese
1 cube soft butter
5 Cups Powerdered Sugar
1 tsp vanilla
1/2 cup milk
*Beat cream cheese and butter together really well. Add vanilla. Beat. Add
powdered sugar. Beat well. Use milk to thicken or thin as needed.
DELICIOUS!

week. With Roman having a diaper rash for the first time
from the Augmentan. Talk about a LIFE SAVER!
Poor baby boy! This stuff looks and feels gross but works like a charm!


Sally Hansen No CHIP
10 day color

I have always been an OPI girl. But the other day at Smith's in good ol Farmington

all Sally Hansen stuff was on sale for 50% off. So I thought "What the hell?"

So I bought a marvelous dark purple sparkly color and painted my nails Sunday night.

I AM NOT EFFING KIDDING GIRLS. NOT ONE CHIP. AND I TYPE ALL DAY.

I LOVE IT!

BUF-PUF PADS

A total throwback! Anyone who knows me well knows that I used to use these in high school.

I have super dry skin and these exfoliate like no other.

BAD NEWS: They stopped carrying these in the stores about 3 years ago. So i have been neglected, and so has my poor skin.

GOOD NEWS: Chucky P found them on drugstore.com and ordered me 6 boxes. They will be here today. I will be looking like a teen model again in a few days. I wonder if they will help me transform back to my old self.. ie. lose some chub-a-lubb.

Oh the yumminess.. oh the faboulousness... Smooth, Tasty, Sticky Icky goodness.

And it makes your breath nice and minty. Seriously LOVE IT.

11th times a charm???

Roman had his 11th hair cut last night.
I love having a sister to cuts hair!
Here is a picture of Roman being bribed with
popsicles in his high chair before she started to snip.
Yes. Below is the hair that came off of my kids head.
He is 15 months. Remember this is number 11.
I love his mexi-melt hair! :)

We decided to do a mullet mid-cut.

Does not look as cool though because it curls in the back.

I wish he could have a rad 80's mullet, and I would wear my hair in a side pony tail everyday.

We decided to go for a mohawk instead.


He still had kisses for mom even though he had to be

moved to the sink to be entertained by water.

All done and tired and in jammies with his new do!

Any tricks for getting him to look at the camera and actually smile.

Every picture lately is Roman looking like I just

stole a sucker from him.

My brother..

OH my sweet little brother.. I love him so..
We took Roman to the park yesterday..
I got home from work and Roman was in the best mood.
That Augmentan rocks my world.
My little brother Tim was having so much fun taking Roman down the slides!


Tim goes on a mission June 26th. I am sad.
I will miss him. Roman will forget him.
He will be able to teach my kid a foreign language when he gets home though.
That's a plus.
He is going to the Brazil Porto Allegre South Mission.
Roman loves his uncle Timmy.
Jessica loves her brother Timmy.
We all love Timmy.

Mouthwatering Monday!


So I decided that every Monday I am going to blog about my favorite meal or recipe that I prepared/had the previous week. This week.. hands down.. my cousin Sandy's recipe for Chicken wonton salad. Seeing that I was sicker than ten dogs all week long and literally did not cook one other thing other than dino nuggets and madarian oranges, I do not have a lot to compare too. BUT even if I cooked gourmet meals all week long, I am sure that this would be the recipe I would share. BECAUSE IT IS YUMMMMY! My dad and my hubby downed any what would have been leftovers last night.

Chicken Wonton Salad


3 boneless, skinless chicken breasts
½ package wontons, cut into thirds
1 head iceberg (or romaine) lettuce, torn into pieces
1 (11 ounce) can mandarin oranges, drained
1 (8 ounce) can sliced water chestnuts, drained ( I DONT USE>> GROSS)
1 (4 ounce) package slivered almonds, toasted
¼ c sesame seeds, toasted
1 bunch green onions, chopped

Dressing:
4 T sugar
1 t salt
¼ t pepper
4 T white wine vinegar
½ c vegetable oil

Boil chicken breasts until cooked and slice into small pieces (I prefer to cook in pan versus boil). Fry wontons in vegetable oil until crispy and cool on paper towels. In a large salad bowl, mix together chicken and wontons with lettuce, oranges, water chestnuts, almonds, green onions and sesame seeds. Toss with dressing (which has been mixed well) and serve.

What's this crap?!?!?

What is this you ask?
This is yet another antibiotic for my poor son.
Last Monday/Tuesday (can't remember) my poor
boy had a double ear infection.
After a day of this yesterday:
Roman: "UHHH AAHH H MEEE MEE UUHH"
Me: "Whats the matter baby?"
Roman: "UHHHHHH"
Roman: (following me all over the house every where I went) "UHH AAHH ME"
Me: (still being sickly myself) " WHy is my child so ornery and grouchy and miserable"
So I called the Pedi and took him in last night at 8:40 and sure enough the 14 DOSES of antibiotic he was on had not even helped the double ear infection.
Poor little man. So they gave us Augmenten.
So in 10 days we go back to the pedi to talk about TUBES.
Anyone familiar with the pro's/con's of tubes?
If it gets my kids some relief I am totally game.

Single Mother no more!

A few reasons I am glad Chuck will be home tonight...


1. An extra set of eyes for a sneaky little boy! What is
it with kids and dog food. GROSS!




2. Laundry, I am sick and tired of doing it by myself,.



3. I swear if I have to change one more poopy butt I will
just give up and go to Mexico for the rest of the winter.


4. Someone else to laugh at a cute naked bum. Soon after this picture was taken
I had to run grab something from my bedroom and was back in the living room in 20 seconds
to the suprise of Roman pee and poop on my hardwood floors.
